Yeah, I make a compound butter with chives, shallots, garlic, and a little bit of smoked salt with unsalted Kerrygold or locally made Amish butter.

Looks good.  Those onions look particularly tasty.  I'm doing a ribeye tonight with asparagus and taters.

The onions are made on the griddle with some compound butter and some of my steak rub. They're white onions (because it's the most forgiving onion on keto) but between the butter and seasoning, they're like candy, and there's no sugar in any of it.

They were a wedding gift from my wife's aunt way back when. Been meaning to replace them as they're going on 15 years old, but they're still sharp and do the job.

It's a "hidden' cut (I used parentheses as people refer to it as hidden but it's lurerally right in front, just many overlook it) in the chuck roll. Been buying 20+ pound primal chuck rolls at Sam's and processing them myself. Last one I got on sale for $3.99/lb and got 8 chuck steaks, 8 chuck eye steaks, 6 Denver steaks, and about 5 lbs of trim I ground up for burgers. Never seen it in the stores, only gotten it with this method.

I would say it's like a cross between ribeye in terms of flavor and NY Strip in terms of fat and texture.

Edit: My wife describes it as ribeye in taste, NY Strip in tenderness, and filet in texture.

In most cases, yes. But I wanna save them for a special occasion, so I double vacuum sealed them and into the freezer. Should be like the day they went into the freezer when thawed.
